1/2 tablespoon full fat coconut milk
2 tablespoons nutritional yeast
2 tablespoons chopped scallions

Coconut Curry Cauliflower Rice
2 1/2 cups cups cauliflower rice (285 grams)
1 1/2 tablespoons full fat coconut milk
1/2 tablespoon curry powder
1 teaspoon curry paste
1/2 tablespoon avocado oil
1/2 tablespoon lime juice
salt and pepper, to taste
Green Goddess Cauliflower Rice
2 1/2 cups cups cauliflower rice (285 grams)
2 tablespoons packed parsley, roughly chopped
2 tablespoons packed dill, roughly chopped
1 tablespoon packed chives, roughly chopped
1 tablespoon packed basil, roughly chopped
1/2 tablespoon avocado oil
1 tablespoon lemon juice
salt and pepper, to taste
Mushroom and Scallion Cauliflower Rice
2 1/2 cups cups cauliflower rice (285 grams)
6 medium mushrooms, sliced (131 grams)
3 scallions, green and white part separated and chopped

1/2 teaspoon garlic powder

Instructions
1.Fajita Cauliflower Rice
In a large nonstick skillet over medium heat, add oil and let it get hot, about 30 seconds. Add onion and sauté for 2 minutes, stirring occasionally. Add peppers and cook for another minute. Add cauliflower rice, taco seasoning, and salt and pepper and cook for 4-5 minutes until tender. Let cool for a minute and stir in lime juice and cilantro.
